Coconut Oil Nutrition (part 1)


Coconut oil nutrition gives us many essential benefits to our health. It's much better than those vegetable oils we usually take in every day. Now it's time to discover it closely.

Saturated Fatty Acids

Coconut oil contains more than 92% of saturated fatty acids. It is very much saturated in nature.
Each carbon atom bonds together, forming chain structure.

For 'Single Bond' type, each carbon atom has two hydrogen atoms bonded. So all carbon atoms are completely bonded. That's why it becomes saturated fatty acids.

Saturated fatty acids in coconut oil usually have between 8 and 14 carbon atoms in total. So there's no any double bonds available.

The primary saturated fatty acids in coconut oil comprise of:
The rest 8% are unsaturated fatty acids, which have few double bonds between each carbon atom. Chances are that hydrogen and oxygen will likely add to the double bonded link. And it will worsen both chemical structure and quality of the oils.

For example, the oil will go rancid quickly if the oxygen adds into it.

However, the quality of coconut oil nutrition remains stable because it predominantly contains Saturated fats. Only 8% Unsaturated fats are considered very few compared to other vegetable oils.

You can see chemical structure of Saturated and Unsaturated fatty acids in the picture below. Notice that Oleic acid and Linoleic acid have a couple of double bonded like between each carbon atom (C=C). Yes, it makes them become unsaturated.

We usually cook with Unsaturated oils like soybean oil, sunflower oil, safflower oil, canola oil, corn oil, flaxseed oil or even olive oil. They are likely to get oxidized and become Trans Fats.

Now let's take a look at the benefits of Saturated oils. Coconut oil is much saturated. And because of this properties, the fatty acid structure is very stable to the following...

1. Oxidation

The oxidation is basically an oxygen-adding reaction. Rusty metal is a good example to identify the result caused by oxidation. The rust will corrode and destroy the metal structure.

Free Radical cell is the consequence outcome of the oxidation. If we get too many of them, our good cells and DNA structure in the body will negatively alter.

This is a common cause of many serious health problems these days like premature aging, heart disease, cancer, and many more.

However, an overlooked cause is daily consuming Unsaturated oil.

Of course, we do everyday. We take the diet cooked by vegetable oils like soybean oil, sunflower oil, canola oil, corn oil, olive oil, etc. This kind of the oils is more likely to generate free radicals inside the body.

2.2 Hydrogenetion

The process of adding hydrogen into unsaturated oil under high pressure can also generate Trans Fats.
This is for a commercial purpose. The manufacturers want to make it saturated artificially.

The reason is they don't want the oil goes rancid shortly. Another is for food manufacturing to handle easily when it becomes a solid form.

Unlike natural Saturated oil (i.e. coconut oil), the manipulation will alter the hydrogen link in fatty acid structure, making it become Trans Fats. We call it Partially Hydrogenated oil.

However, coconut oil nutrition is composed of natural saturated fatty acids. This makes it heat stable and is hard to get oxidized and hydrogenated.


Medium Chain Fatty Acids


Coconut oil contains the maximum amount of medium-chain fatty acids (MFCAs) compared to other edible oils. Coconut oil contains MFCAs at about 62.5% of total fatty acids in coconut oil.

Enig (1999) reported that Monolaurin in coconut oil can kill bacteria, fungi, yeasts, protozoa and viruses. Furthermore, Dayrit's research (2000) found Monolaurin can reduce the amounts of HIV in a person who has AIDS.

Monolaurin kills only lipid coated viruses that cause influenza, herpes, mumps, SARS and AIDS.
Because Monolaurin is kind of fatty acids, it can penetrate the lipid layer, gets into the cell and ultimately kill virus.

Until now, nothing can kill lipid coated viruses. They merely stop virus's activation for a certain period of time.
